Sourced from the cool, rocky soils of a bio-sustainably farmed hillside vineyard, this Cabernet Sauvignon is beautifully balanced, deftly pairing opulence, power and muscular intensity with finesse and elegance. Donning a dark rosewood-red color, this wine slowly reveals aromas of dried raspberries, Satsuma plum and a touch of sweet baking spices. A full entry coats the palate emanating lush flavors of warm blackberry pie, ripe purple plum and Tahitian vanilla bean. Broad tannins, bright acidity and a decadent creaminess support a generous finish accented with notes of freshly-ground Masala chai spices. This wine is beautiful now but will age elegantly for at least 20 years.
Situated adjacent to the world-famous Pagani Ranch Vineyard, this family-owned vineyard sits at 450 feet elevation above the historic town of Glen Ellen. The biodynamic farming; rocky site comprised of loamy, skeletal soils and cool growing conditions from the nearby Pacific contribute indelible character.
Blocks W2, W3, W5 and W6 gently sloped at 20-30%, were hand-picked at the first light of dawn, and optically sorted at the winery. The blocks were combined in gravity-fed tanks where they were cold-soaked for 3 days and co-fermented including a 25-day extended maceration.
The wine was aged 18 months in 14 thin-stave French oak barrels (60% new, 40% used). Prior to bottling, the 5 best barrels were selected for the final blend which aged 16 months in bottle.
